Description
These foil chicken packs are delicious, easy to prepare and full of tasty Mexican flavors. It can be made in the oven or on the grill, which would make a fantastic meal to cook while camping.
Ingredients
- 1 c. instant Minute white rice
- 1 1/2 c. water
- 2 large, 7 oz. each, boneless, skinless chicken breasts
- 1/2 t. each: cumin, garlic powder, salt and pepper
- 1 t. chili powder
- 1/8 t. paprika
- 1 oz. full-fat cream cheese
- 6 T. salsa verde
- 1/2 c. roasted corn (freshly grilled or canned roasted corn)
- 1/2 c. black beans
- 1/2 c. Pepper Jack cheese
- roasted green chiles, lime, cilantro, sour cream, red bell pepper, optional
Steps
- Preheat oven to 400 degrees. Generously grease 2 large sheet of heavy duty aluminum foil with cooking spray.
- Weigh chicken to get two 7 oz. pieces; pound or slice the pieces to 1/2 inch thickness.
- Toss together the instant rice and water; let stand for 5 minutes.
