You can serve this as a side salad or even as the main dish. It's very simple to make and is great to serve in the summer at pool parties, BBQ's, and picnics. It's tangy and garlicky and simply delicious.
1 T. kosher salt
8 oz. bowtie pasta
1/4 c. red onion, thinly sliced and cut into 1-inch pieces or 1 small minced onion
3 cloves garlic, minced
6 T. olive oil
1/4 c. red wine vinegar
1 t. kosher salt, or to taste
1/2 t. freshly ground black pepper
4 c. baby spinach
2 c. grape or cherry tomatoes, halved
freshly grated Parmesan or 6-8 oz. feta cheese, if desired
Bring a large pot of water to a boil with 1 T. kosher salt; cook pasta according to the package directions, to al dente, about 13 minutes. Drain well; DO NOT rinse the pasta.
While pasta is cooking, place onions and garlic in a large bowl; add olive oil and vinegar, covering the onions. Add drained pasta to the mixing bowl; toss well; add tomatoes and spinach; toss to mix well.
Season with salt and pepper, to taste. Sprinkle with Parmesan cheese or add feta cheese, if desired.
