This chicken and rice dish is so good and flavorful, your family will ask you to make it for them. It's a satisfying and comforting dish that just gets thrown together and baked. Serve with your favorite vegetable and a side salad.
2 c. raw long grain white rice
2 c. milk
2 - 10 oz. cans cream of chicken or cream of mushroom soup
1 packet onion soup mix
1 lb. chicken tenderloins
1/2 c. grated Gruyere cheese
1 t. chopped parsley, for serving
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
Add rice, milk, cream of chicken soup and soup mix to a bowl; stir well.
Pour rice mixture into the baking dish; place chicken on the top. Cover tightly with aluminum foil to ensure that the rice cooks in the allotted time; bake 60-80 minutes, stirring once halfway through cooking.
Pull back foil; top with the grated Gruyere cheese. Cover tightly; bake 15 minutes or until rice is tender.
Sprinkle with parsley just before serving.
4 servings.
*Minute Rice could be a good substitute for the long grain white rice.
