You are going to love this seafood dish. It is sweetened with honey, tangy with freshly squeezed lemon juice and broiled until it is flaky.
one large 1 1/2 - 2 lb. salmon fillet or four 4-6 oz. each salmon fillets, skin on
1/2 T. olive oil
1/2 t. sea salt, or to taste
1/4 t. freshly ground black pepper, or to taste
1/2 t. smoked paprika
1/4 t. chili powder
2 T. low-sodium soy sauce
freshly squeezed juice from 1 lemon
2-3 T. honey
2-3 T. fresh chopped parsley, divided
lemon slices, for garnish
Preheat oven to 400 degrees. Line a baking sheet with a large sheet of parchment paper or heavy-duty aluminum foil.
Place salmon on baking sheet; drizzle with oil; season with salt and pepper; rub on paprika and chili powder; slide lemon slices halfway underneath the salmon.
In a medium bowl, whisk together soy sauce, lemon juice and honey; drizzle evenly over salmon. Sprinkle with half of the parsley; fold parchment paper or aluminum foil sides up to prevent juices from leaking out. (It does not have to cover salmon). Marinate salmon for at least 15 minutes.
Bake for 13-16 minutes, depending on how large salmon is, or until salmon is flaky and to your desired doneness. Do not overcook!
Unwrap the salmon; turn oven to broil. Cook for an additional 3-5 minutes, or until caramelized and slightly charred.
Cut into pieces; discard skin.
Serve immediately with more chopped parsley, season with more salt, if needed; splash with lemon juice.
