4 thin boneless, skinless cutlets, 4 oz. each (or turkey cutlets)
1/2 t. kosher salt
pepper, to taste
1/4 c. all-purpose flour
1/2 t. butter
1 1/2 t. olive oil
2/3 c. reduced-sodium chicken stock/broth
1 T. freshly squeezed lemon juice
1/2 T. Dijon mustard
4 thin slices low-sodium deli ham, like Boar’s Head (3 oz. total)
4 slices light Swiss Cheese, like Alpine Lace (3 oz. total)
freshly chopped parsley, for garnish
Season chicken with salt and pepper, to taste.
Place flour in a shallow dish; dredge chicken in flour on both sides, shaking off excess; reserve flour.
In a small bowl, combine chicken stock/broth, lemon juice, Dijon mustard and 1 t. reserved flour; whisk until smooth.
Heat a large non-stick skillet over medium-high heat; melt butter; add 1 t. olive oil and half of the chicken; cook 2 minutes per side, until slightly golden; transfer to a plate. Add remaining 1/2 t. olive oil and remaining chicken; cook 2 minutes per side; set aside with the other chicken pieces.
Reduce heat to medium-low; add chicken stock/broth mixture; whisk, scraping up any bits stuck to the pan; simmer 2 minutes to reduce slightly. Return chicken to the skillet; top each cutlet with a ham slice and a slice of Swiss cheese; cover skillet; simmer on medium-low for 3 - 4 minutes until cheese melts.
Serve chicken with sauce spooned over each piece; garnish with parsley.
