This is a super easy and good for you breakfast. It's so good, you won't limit it to breakfast.
4 eggs
splash of milk
2-4 T. each of chopped green pepper, mushrooms, onion, tomatoes
shredded cheese
black pepper
salt
1 avocado, sliced
crisply cooked bacon, crumbled, optional
Preheat skillet on medium heat; cook veggies until tender and mushrooms have browned- a few minutes.
Beat eggs and milk in a small bowl with a fork. Pour egg mixture into hot skillet with the veggies; scramble with a spatula, cooking until eggs are done, a few minutes.
Cut avocado in half; remove and discard pit. Score lines lengthwise through avocado flesh. Scoop out of peel with a spoon; slice.
Once eggs are done, add cheese and bacon, if using; stir until cheese is melted.
Serve eggs and veggies seasoned pepper and salt, if desired. Top with avocado slices.
