Get out that under used slow cooker and make a delicious Italian soup with Italian sausage, potatoes, onions, kale, chicken stock and seasonings. You will be glad that you did.
1 lb. ground hot Italian sausage
1 bag Simply Potatoes, diced potatoes and onions (or substitute with 1 diced yellow onion and 4 russet potatoes, peeled and cubed)
2 cloves large garlic, minced
32 oz. chicken stock
1/2 bunch kale (several handfuls), de-stemmed and torn into bite sized pieces
1 c. heavy cream
2 T. flour
salt and pepper, to taste
pinch of red pepper flakes, optional
Line a slow cooker with a slow cooker liner for easy clean up.
Heat a large saute pan over medium-high heat; brown sausage; add minced garlic; stir to combine.
Drain off and discard excess grease; add sausage and garlic to the lined slow cooker. Add bag of diced potatoes and onions; cover with chicken stock and water, if necessary to completely cover potatoes and sausage.
Cover; cook on LOW for 5-6 hours or on HIGH for 3-4 hours until potatoes are soft.
30 minutes before you are ready to serve, whisk together heavy cream and flour, until well mixed. Pour into slow cooker; add kale; stir to combine. Cover; cook on HIGH for 30 minutes until soup has thickened slightly.
Season to taste.
