If you need a new, exciting way to prepare salmon, you need to try this recipe. It's really simple to do and tastes amazing. It is so easy and gorgeous, it would make a wonderful meal for a dinner party.
4 center cut salmon filets, about 1/3 lb. each
olive oil
salt and freshly ground black pepper
1 large shallot
1/4 c. white wine
freshly squeezed juice of 1 lemon
1 c. heavy cream
1/4 c. freshly chopped dill
3 T. capers
Garnish: thin lemon slices and more freshly chopped dill
Preheat oven to 400 degrees.
Lightly coat a large skillet with olive oil; heat on medium-high heat until hot, but not smoking.
Season salmon on all sides with salt and pepper; sear on both sides; remove salmon to a baking sheet; bake 12-15 minutes, or until just done through.
Meanwhile, make the sauce. Add the shallot to the browning skillet; saute for 1-2 minutes to soften; add wine; let wine reduce for several minutes. Add the lemon juice and cream to the skillet; bring to a simmer. Add the fresh dill and capers; add salt and pepper, to taste.
When the salmon is done, add it to the skillet, placing it down in the sauce; spoon some sauce over the salmon. Garnish with lemon and more fresh dill.
Serve immediately on a bed of wilted spinach, with couscous or a rice pilaf on the side.
