1 T. extra virgin olive oil
1 T. unsalted butter
14 oz. package pork Polish Kielbasa, diced (or preferred Polish Kielbasa)
1 medium sweet onion, diced
3 garlic cloves, minced
1 c. regular long or short grain white rice
2 c. low-sodium chicken stock/broth
14 oz. can cannellini, pinto, Great Northern or black beans, rinsed and drained
1/2 t. dried Italian seasoning
1/8- 1/4 t. red pepper flakes, or to taste
salt, to taste
black pepper, or to taste
1/4 c. finely chopped fresh parsley
In a large non-stick skillet, heat oil and butter over medium-high heat; add kielbasa and onion; sauté until onions become soft and translucent for about 3 minutes, stirring occasionally. Add in the garlic; stir for about 30 seconds.
Stir in rice, chicken stock/broth, beans, Italian seasoning, red pepper flakes and a bit of salt and pepper. Bring to a boil; cover; reduce heat to medium-low; simmer for 20 minutes or until rice is done, stirring once toward the end to prevent sticking.
Remove from the heat; stir in parsley.
Serve immediately.
