Put this easy casserole on your dinner rotation. It's a meatball sub in a casserole that will surely impress family and friends. It's also possible to make it vegetarian with vegetarian meatballs, either store bought or homemade.
1 loaf Italian bread or baguette, cut into 1 inch thick slices
4 oz. cream cheese, softened
1/4 c. mayonnaise
1/4 c. plain Greek yogurt
1/2 t. garlic powder
1/4 t. dried oregano
1/4 t. dried parsley
1/4 t. pepper
1/4 t. salt
2 c. grated mozzarella cheese, divided
1-2 lb. frozen meatballs (or vegetarian meatballs)
28 oz. jar marinara sauce
1/2 c. water
Preheat oven to 350 degrees.
In a medium saucepan, place water, sauce and meatballs; simmer for about 10-15 minutes, until meatballs are warmed; set aside.
Place bread slices in an un-greased 9 × 13 baking dish.
In a bowl, combine cream cheese, mayonnaise, Greek yogurt and seasonings; stir. Spread cream cheese mixture over bread slices. Sprinkle on 1 c. mozzarella cheese. Spoon meatballs and sauce over the bread. Sprinkle with remaining mozzarella cheese.
Bake uncovered for 20-25 minutes.
