Italian Herbed Butter Salmon and Asparagus Foil Packs

Description

You can make this yummy, easy and healthy meal throughout the year, but it is especially good for BBQ's or camping. It can be ready in as little as 12 minutes on the grill or 20 minutes in the oven. Foil packs make clean up simple.

Ingredients

4 boneless, skinless salmon fillets
salt and pepper, to taste
1 lb. asparagus, woody ends trimmed off and discarded
1 lemon, thinly sliced, plus more wedges, for garnish
½ c. butter, at room temperature
3 t. Italian seasoning
3 t. minced garlic
fresh thyme or parsley, for garnish
freshly squeezed lemon juice

Preheat grill to medium-high heat or preheat oven to 400 degrees.

Season salmon on both sides generously with salt and pepper . Arrange a salmon fillet and ¼ of the asparagus in the center of a 12x12 inch piece of aluminum foil. Repeat with remaining salmon and asparagus on 3 more pieces of foil. Slide lemon slices under the salmon and asparagus.

In a small bowl, mix butter, Italian seasoning and garlic. Drop large dollops of the herbed butter on top of the salmon and asparagus.

Fold the foil tightly around the salmon and asparagus, making sure to seal the ends together tightly so the juices and butter don't leak out while cooking.

Grill over medium-high heat for 6-8 minutes on each side, or bake in oven for 20 minutes, until asparagus is tender and salmon is flaky.

Drizzle freshly squeezed lemon juice over the tops. Serve immediately.
