These breakfast sliders are so easy to make and delicious, you won't just serve them for breakfast.
1¼ lb. ground breakfast sausage
5 slices cheddar cheese, cut into quarters (making 20 pieces)
1 T. butter
5 eggs
3 T. milk
salt and freshly ground black pepper
4 c. arugula
2 T. olive oil
2 T. freshly squeezed lemon juice
10 slider buns, toasted
hot sauce for serving, optional
Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.
Sausage patties:
Divide sausage into 10 even pieces; form into patties. Place on the lined baking sheet. Bake until lightly browned and heated through, 8 - 10 minutes. Remove from oven.
Place 2 quarters of cheese on top of each one; set baking sheet aside.
Eggs:
Melt the butter in a medium pan over medium heat. In a large bowl, whisk eggs and milk together; season with salt and pepper, to taste.
Pour eggs into a hot pan; cook, stirring constantly, until softly cooked, 5 - 6 minutes; remove from heat.
Return sausage patties to the oven to melt the cheese, 1 - 2 minutes.
Dress the Greens:
In a medium bowl, toss arugula with olive oil and lemon juice.
Build the Sliders:
Place a cheesy sausage patty on the bottom of each bun; top with ¼ c. scrambled eggs and 2 - 3 T. arugula. Place the top bun on top.
Serve immediately, with hot sauce, if desired.
