French Onion Noodle Soup

Description

Soup lovers should definitely try this soup. It combines the classic French Onion Soup and noodles, making it more satisfying and hearty. Serve it alone or with your favorite sandwiches or salad.

Ingredients

1/2 c. salted butter
4 sweet onions, sliced
8 c. beef broth/stock
1/4 c. cooking sherry
1-2 T. granulated sugar, optional
2 T. all-purpose flour
2 1/2 t. salt
2 t. Worcestershire sauce
2 bay leaves, dried
2 sprigs fresh thyme
1 bag Reames Frozen Egg Noodles

8 oz. Swiss or Gruyere cheese, shredded
more fresh thyme
freshly ground black pepper

Melt butter in a large soup pot over medium heat. Add sliced onions; cook over medium heat until caramelized and a rich, golden brown color, stirring regularly to prevent burning.

Add in beef broth/stock, cooking sherry, sugar, flour, salt, and Worcestershire sauce; whisk until smooth. Add bay leaves, thyme sprigs and frozen egg noodles.

Bring soup to a boil; reduce heat; simmer 30 minutes or until noodles are fully cooked.

Top with shredded cheese; garnish with more fresh thyme and freshly ground black pepper.
