You don't need pizza crust and all of the carbs to enjoy pizza! Use large portobello mushrooms instead. You can vary the toppings and even make them vegetarian if desired.
4 portobello mushrooms, stems and gills removed
2 t. olive oil
2 t. minced garlic
4 t. Italian seasoning
1 c. marinara sauce
1 1/2 c. shredded mozzarella cheese
1/2 c. cooked sausage
mini pepperonis
Preheat oven to broil. Line a baking sheet with parchment paper.
Remove stem of mushrooms; scoop out gills with a teaspoon. Wipe off mushrooms with a wet paper towel.
In a small bowl, mix together olive oil, garlic and Italian seasoning.
Brush the portobello mushrooms with the seasoning mixture.
Place mushrooms, gill sides up, on the prepared baking sheet. Build pizzas by evenly dividing marinara sauce, mozzarella cheese, sausage and mini pepperonis between the mushrooms.
Broil for about 8 minutes, or until cheese is melted and lightly browned.
Remove from oven.
Serve.
