Dinner is easy and clean up is a snap when you can make an entire meal in foil packets. Lean ground beef made into patties, carrots and onions with mushroom and dry onion soup make them a complete meal. Bake them in the oven or on the BBQ grill.
1 lb. lean ground beef
1 packet dry onion soup mix
4 small potatoes, peeled and sliced
2 c. chopped carrots
1 large onions, sliced
2 T. olive oil
1 t. garlic powder
salt and pepper, to taste
condensed mushroom soup
Preheat oven to 375 degrees. Spray 4 large piecesof aluminum foil with non-stick cooking spray.
Combine ground beef and dry soup mix in a bowl; form into 4 patties; set aside.
In a large bowl, combine all remaining ingredients except for mushroom soup; mix well.
Place 1/4 of the vegetable mixture in the center of each foil piece; top each with 1 beef patty; add 2 T. mushroom soup on top of each patty.
Seal foil packets well. Place packets beef side up on a large baking sheet.
Bake 35-45 minutes or until potatoes and carrots are tender.
4 servings.
*The foil packs could be grilled at medium heat for about 45 minutes or until potatoes are tender and ground beef reaches 160 degrees.
