Change up your meatloaf just a bit to make it even better with gooey mozzarella cheese in the center and a yummy glaze on top. Yum!
1 lb. ground beef (85/15)
1 c. breadcrumbs
1 t. dried basil
1 t. dried oregano
1 t. dried parsley
1 t. salt
½ t. black pepper
½ c. milk
2 T. Worcestershire sauce
8 oz. fresh mozzarella, sliced
Glaze:
1 c. ketchup
¼ c. brown sugar, tightly packed
1 T. Worcestershire sauce
1 T. red wine vinegar
2 cloves garlic, crushed
⅛ t. salt
pinch cayenne pepper
Preheat oven to 350 degrees. Lightly grease a 9 x 13 inch glass baking dish with non-stick cooking spray.
In a large mixing bowl, combine ground beef, breadcrumbs, basil, oregano, parsley, salt, pepper, milk, and Worcestershire sauce; knead until combined.
Divide meat in half. Shape one half of the meat for the bottom half of the loaf; place in prepared pan. Place mozzarella slices down the center, leaving ½ inch around the ends and sides. Shape remaining half of meat as the top half of the loaf, sealing the edges.
Glaze:
In a small mixing bowl, whisk together ketchup, brown sugar, Worcestershire sauce, red wine vinegar, garlic, salt and cayenne pepper. Pour half of this mixture over the meatloaf, reserving the remaining half for later use.
Bake 45 minutes. After 45 minutes, remove from oven; increase temperature to 400 degrees; pour the remaining sauce over the loaf; bake 15 minutes.
Let rest 5 - 10 minutes.
Serve.
