Healthy and low calorie dishes can actually taste good with lots of seasonings and great ingredients. This one is only 183 calories and 0 freestyle WW points per serving and is easily made in the slow cooker.
Ingredients
- 1 1/2 lb. chicken breast
- 14.4 oz. can diced tomatoes, with mild green chilies
- 15 oz. can black beans, drained and rinsed
- 8 oz. frozen corn
- 1/4 c. chopped fresh cilantro
- 14.4 oz. can fat-free chicken broth/stock
- 3 scallions, chopped
- 1 t. garlic powder
- 1 t. onion powder
- 1 t. cumin
- 1 t. cayenne pepper, or to taste
- salt, to taste
Steps
- Place a slow cooker liner in the crock of the slow cooker for easy clean up, if desired.
- Combine chicken broth/stock, beans, corn, tomatoes, cilantro, scallions, garlic and onion powders, cumin, cayenne pepper and salt in the slow cooker.
- Season chicken with salt; lay on top.
