Al's Breakfast Pizza with Tomato, Burrata and Garlic Butter

It's National Pizza Day ! Yay! You don't only have to serve that pizza for either lunch or dinner. Make this one for breakfast and make your family very happy.

Ingredients

1 head garlic
olive oil
8 T. unsalted butter, divided plus more as needed
1 small yellow onion, julienned
6-8 oz. store-bought pizza dough
olive oil spray
3 slices speck, a type of prosciutto
3 cherry tomatoes, halved
3 oz. burrata cheese, cut into 1-inch pieces
1/2 c. shredded Parmesan cheese
1 egg
salt and freshly ground black pepper
3 c. arugula
5 basil leaves, roughly chopped

Preheat oven to 450 degrees.

Cut the garlic head in half, crosswise; place on aluminum foil; drizzle each half with olive oil; seal the foil into a packet; place in oven for 30 minutes.

In a small bowl, add 6 T. butter to warm to room temperature.

Add 2 T. butter to a small pan; add onions; cook 30 minutes until caramelized, stirring often.

Once the garlic is done and still warm, squeeze the garlic pulp from both halves into the butter; mix.

On a floured surface, roll out the pizza dough into an 8-inch round. Place the round onto the back of a quarter sheet tray that has been sprayed with olive oil. Brush some of the garlic butter onto the dough. Bake the dough for 6 - 7 minutes. Remove the dough from the oven; brush on some more butter.

Add the speck, cherry tomatoes, caramelized onions, burrata and Parmesan cheese. Create a well in the center; crack on an egg. Bake the pizza for 11 - 12 minutes until the egg is set. The egg whites will jiggle a little when you pull it out from the oven, but will firm up after several minutes.

Season the egg with salt and freshly ground black pepper.

Serve pizza, garnished with arugula and basil.
