These chicken sliders are so simple to make in the slow cooker. Most families don't have a ton of time to prepare dinner and do all of the other things that need to be done. That's why putting your slow cooker to work makes your life so much simpler. This
1 large raw onion, thinly sliced
1 c. unsweetened frozen peaches, sliced
1 3/4 lb. raw boneless, skinless chicken breasts
3/4 c. BBQ sauce
1/4 c. apple cider vinegar
1 T. canned chipotle peppers in adobo sauce, minced (remove seeds for less heat, if desired)
1 T. adobo sauce
1 t. salt
16 slider rolls, toasted
Place onions and peaches into a 4-quart or larger slow cooker; top with chicken.
In a glass measuring cup, whisk together BBQ sauce, vinegar, chipotle pepper and adobo sauce; pour over chicken; cover; cook on Low for 6-7 hours.
Use 2 forks to shred chicken in slow cooker; sprinkle with salt; stir.
Serve on toasted buns.
16 servings, each serving 1/4 c chicken on 1 slider roll.
