Everyone loves one skillet meals because of the easy clean up. They are even better when they are ready in about 30 minutes. But the meals must be delicious and this one certainly is. It's loaded with wonderful flavor and a delicious sauce. Serve with mas
3 slices bacon
1 lb. boneless skinless chicken breasts cut into tenders
1 T. bacon drippings
1 T. butter, if needed
salt
black pepper
garlic powder
Sauce:
1 T. butter
6-8 oz. mushrooms
1/2 c. chicken broth/stock
1/2 c. heavy whipping cream
1/2 freshly, finely grated Parmesan cheese
chopped parsley or green onions, for garnish
salt and pepper, to taste
Heat a large skillet over medium-high heat; add 3 bacon slices; fry until crisp; transfer bacon to a paper towel lined plate; crumble; set aside.
There should be about 1 T. bacon drippings remaining in the skillet. If there isn’t, add 1 T. butter to the skillet before adding chicken.
Season chicken with salt, black pepper and garlic powder, to taste. Place chicken breast tenders in the skillet; cook about 4 minutes per side, until juices run clear and the chicken is cooked through. Remove chicken from the skillet; set aside.
Sauce:
Melt 1 T. butter in skillet; add mushrooms; cook until tender. Add in 1/2 c. chicken broth/skillet; bring to a simmer; add in 1/2 c. heavy whipping cream.; stir to combine. Allow sauce to simmer for 4-5 minutes to thicken; add in finely grated Parmesan cheese.
Return chicken to the skillet; add in crumbled bacon. Garnish chicken with finely chopped parsley or green onions.
Serve.
