Serve family or guests this delicious, healthy salad as a side dish or even as a main dish. It has wonderful ingredients like chicken, corn, bacon and avocado in a wonderful lemon dressing.
Avocado Chicken Salad:
2 large cooked chicken breasts, shredded *
2 large avocados
1 c. corn from 1 cooked corn cob
6 oz. lean bacon, cooked and chopped or uncured turkey bacon**
1/4 c. chives or green onion, chopped
2 T. dill, chopped
Lemon Dressing:
3 T. freshly squeezed lemon juice
3 T. extra virgin olive oil
1 t. sea salt or to taste
1/8 t. black pepper
Garnish:
2 hard boiled egg slices, if desired
Shred the 2 large cooked chicken breasts; place into a large mixing bowl.
Peel and pit 2 large avocados; slice into bite-sized pieces; add to the bowl. Add 1 c. cooked corn (freshly cooked corn is best); toss in 1/4 c. chopped green onion or chives, chopped bacon and 2 T. fresh dill.
Add dressing ingredients to a small bowl; stir to combine. Drizzle over salad; toss to combine.
Serve with slices of hard boiled egg, if desired.
Makes 6 side dish servings.
*Rotisserie chicken, home cooked chicken breast seasoned with salt and pepper, or well-drained canned chicken can be used.
**For a healthier option, use uncured turkey bacon which tastes amazing, but has less fat.
