If you need a breakfast or brunch for a special occasion, when company comes, a holiday or just for fun, this one is it. It isn't really a healthy one, but it sure is over the top good.
Pancakes:
1 1/2 c. AP flour
1/2 c. graham flour (or whole wheat flour)
2 t. baking powder
1/2 t. salt
4 T. butter melted
2 eggs
2 c. milk
1 T. honey
non-stick cooking spray or butter
Topping:
chocolate ganache (or melted chocolate)
marshmallow creme
maple syrup
Heat griddle to medium. (300 degrees on an electric griddle)
Whisk together both flours, baking powder and salt. Whisk together butter, eggs, milk and honey.
Pour wet ingredients over the dry ingredients: whisk just until combined.
Butter or spray griddle with non-stick cooking spray, as needed. Pour 1/4 c. batter per pancake onto the hot griddle. When bubbles appear on the surface of the pancakes and the edges begin to set, flip and cook another minute or 2 until cooked through and golden brown. When the pancakes are done, create the s'more stacks.
S'more Stacks Assembly:
Place 1 pancake on a plate; spread with chocolate ganache; spread the bottom of another pancake with marshmallow creme; place marshmallow creme side down on the chocolate covered pancake; spread the top of that pancake with chocolate; repeat until there are 5 pancakes per stack, or as many as desired.
Serve.
Yield: 4 servings with 5 pancakes per stack.
