Your family will beg for this easy slow cooker meal. It makes the perfect dinner for busy weeknights or even for a Sunday dinner. It's warm, comforting and hearty especially when served over mashed potatoes, rice or egg noodles.
Meat:
1 ½ lb. beef chuck or sirloin, cut into large bite-size pieces
1 t. salt
½ t. pepper
1 T. olive oil
1 medium onion, chopped
6 garlic cloves, minced
Gravy:
1 T. unsalted butter
½ c. all-purpose flour
4 c. beef stock
1 T. low-sodium soy sauce
1 t. Dijon mustard
1½ t. beef bouillon
1½ t. sugar
½ t. dried parsley
½ t. paprika
¼ t. dried oregano
¼ t. dried thyme
freshly chopped parsley, for garnish
Cut meat into bite sized chunks on a cutting board; toss with salt and pepper.
Heat olive oil in a large skillet over medium-high heat; add beef in a single layer, working in 2 batches if necessary, to the hot skillet; cook for about 2 minutes, without stirring. Let cook until it has a nice sear/crust on 1 side, which will give it a lot of flavor. Continue to cook while stirring until beef is browned all over but not cooked all the way through. Transfer beef to 6-quart slow cooker; top with chopped onions and minced garlic.
Melt 1 T. butter to the remaining juices left in the skillet; whisk in the flour until dissolved; add remaining gravy ingredients. Bring to a boil; reduce to a simmer until thickened to the consistency of thick gravy, making sure to let it get thick enough since it will thin out a bit in the slow cooker. Place in the slow cooker; stir to combine.
Cook on High for 3-4 hours or on Low for 5-7 hours. Beef is done when it is melt-in-your-mouth tender. Season with salt and pepper, if needed.
Garnish with freshly chopped parsley for color. Serve over or with mashed potatoes, egg noodles or rice.
