Everyone loves one pot meals because of the easy clean up. This one is also ready in 30 minutes and is so easy to prepare. The chicken is juicy and tender, the sauce is a creamy, buttery, cheesy broth in which the rice is cooked. This meal will wind up on
1 1/2 lb. chicken breasts, cut into 1 inch pieces
4 T. butter
1 large onion, diced
3 cloves garlic, minced (3 t.)
2 t. Italian Seasoning
1 t. black pepper
1 t. salt
2 1/2 c. chicken broth/stock
1 c. long grain white rice
1/2 c. heavy cream
1/4 c. Parmesan cheese
fresh parsley for garnish, if desired
Heat butter in a large skillet over medium-high heat; add onion; cook for 2-3 minutes, until beginning to soften. Add chicken pieces, along with Italian seasoning, pepper and salt; cook and stir for 5 minutes until chicken is golden on all sides. Add garlic; cook for 1 minute, stirring constantly. Add chicken broth/stock and rice; stir.Bring to a boil; reduce heat to medium-low. Cover; simmer 17-20 minutes, until rice is completely tender. Stir in the heavy cream and Parmesan cheese.
Serve immediately garnished with parsley if desired.
