Ingredients

• 1 1/2 lb. chicken breasts, cut into 1 inch pieces
• 4 T. butter
• 1 large onion, diced
• 3 cloves garlic, minced (3 t.)
• 2 t. Italian Seasoning
• 1 t. black pepper
• 1 t. salt
• 2 1/2 c. chicken broth/stock
• 1 c. long grain white rice
• 1/2 c. heavy cream
• 1/4 c. Parmesan cheese
• fresh parsley for garnish, if desired

Steps

1. Heat butter in a large skillet over medium-high heat; add onion; cook for 2-3 minutes, until beginning to soften. Add chicken pieces, along with Italian seasoning, pepper and salt; cook and stir for 5 minutes until chicken is golden on all sides. Add garlic; cook for 1 minute, stirring constantly. Add chicken broth/stock and rice; stir.Bring to a boil; reduce heat to medium-low. Cover; simmer 17-20 minutes, until rice is completely tender. Stir in the heavy cream and Parmesan cheese.
2. Serve immediately garnished with parsley if desired.
