Description
These stuffed chicken breasts are so good, you can serve them when company comes for dinner. You can have them ready and on the table in less than 30 minutes. Serve with pasta, potatoes or rice.
Ingredients
- 3 large chicken breasts
- salt and pepper, to taste
- 1 1/2 t. garlic powder, divided
- 1/4 t. paprika
- 1 c. finely chopped broccoli florets
- 2 T. water
- 1/2 c. finely diced red bell pepper
- 1 c. mild Cheddar cheese
- 1 T. mayonnaise
- 2 T. olive oil
Steps
- Preheat oven to 425 degrees.
- Season both sides of the chicken breasts with salt, pepper, paprika and 1/2 t. garlic powder. Use a sharp knife to cut a slice through the middle of the chicken breasts, but not all the way through, creating a pocket for the filling.
