These little meatloaf rings are really tasty and easy to make. They definitely aren't your mother's meatloaf.
3 bell peppers, any color
1 lb. lean ground beef
1/4 c. breadcrumbs
1 egg, lightly beaten
1 t. Worcestershire sauce
1/2 onion, finely chopped
1/2 t. fresh thyme leaves, chopped
1 clove garlic, minced
1 T. tomato paste
kosher salt
freshly ground black pepper
1/4 c. ketchup
1 T. brown sugar
2 c. shredded Monterey Jack cheese
1 T. fresh parsley, for garnish
Preheat oven to 350 degrees. Line a medium baking sheet with parchment paper.
Cut ends off of peppers; set aside. Remove/discard seeds; slice peppers into 2 inch thick rings. Place on prepared baking sheet.
In a large bowl, combine ground beef with breadcrumbs, beaten egg, Worcestershire sauce, onion, thyme, garlic and tomato paste; season with salt and pepper; stir until combined. Fill each pepper ring with meatloaf mixture.
In a small bowl, whisk together ketchup and brown sugar; brush on tops of meatloaves.
Bake for 35 minutes. Top with cheese; bake 5 - 10 minutes or until cheese is melted.
Serve, garnished with parsley.
