This meatloaf recipe just might convert you into like meatloaf if you don't like meatloaf. It's moist, delicious and full of flavor. And the glaze just takes it over the top.
Meatloaf:
2 lb. lean ground beef
1 c. quick oats
1 1/4 c. milk
1 egg, beaten
1/4 c. minced onion
1 t. Worcestershire sauce
1/2 t. kosher salt
1/4 t. freshly ground black pepper
1/4 t. sage
1/4 t. celery salt
1/4 t. ground mustard
1/4 t. granulated garlic or garlic powder
Glaze:
1/4 c. ketchup
1 T. balsamic vinegar
1 T. brown sugar
Preheat oven to 350 degrees. Line a baking sheet with aluminum foil.
Combine all meatloaf ingredients in a bowl; mix together with your hands; shape into a loaf form; place prepared baking sheet.
Stir together the glaze ingredients; spoon over the top of the meatloaf. Bake until the internal temperature reaches 170 degrees, about 65-70 minutes.*

* The cooking time will be determined by the shape and size of the meatloaf. Try to shape it relatively flat and oblong so that it usually cooks in about 65-70 minutes. A more traditional 4x4x8 loaf will take about 90 minutes.
