This quick and easy pork chop recipe will definitely become one that you add to your recipe rotation. The bone-in thick chops keep them nice and juicy with less tendency to overcook. They are made in a sweet and savory sauce that is fantastic when served
4 bone in pork chops, 1 inch thick*
2 t. olive oil
salt and pepper, to taste
3 T. butter
2 t. minced garlic
3 T. brown sugar
1 t. Italian seasoning or equal parts dried oregano, basil and thyme
1 T. chopped parsley
lemon wedges and parsley sprigs, for garnish
Preheat oven to 400 degrees.
Heat olive oil in a large skillet over medium-high heat.
Season pork chops on both sides with salt and pepper, to taste; add to skillet in a single layer; cook 5-6 minutes per side or until browned; remove from skillet; place on a plate. Cover with foil to keep warm.
Add the butter to skillet; melt; add garlic, brown sugar and Italian seasoning; cook for 30 seconds, stirring constantly. Place the pork chops back in skillet; spoon sauce over the top.
Place skillet in the oven; bake for 10-15 minutes or until pork chops are cooked to desired level of doneness. Spoon sauce from the bottom of skillet over the pork chops; sprinkle with parsley.
Serve, garnished with lemon wedges and parsley sprigs, if desired.
4 servings.
*You can use boneless pork chops, just watch them carefully to make sure they don’t overcook.
