Your family will love this tasty chicken and rice dish with peanuts and hoisin sauce. You will love it because it's easy, quick and made in just one pan, which makes clean up so much easier.
6-8 chicken thighs, bone-in or boneless
1 1/2 c. long grain rice
1 1/2 c. chicken stock
1 1/4 c. water
1/2 c. peanuts
1/2 c. Hoisin sauce
pinch of salt
1 1/2 T. rice wine vinegar
Preheat oven to 350 degrees with baking pan/dish in the oven.
Once warmed, remove baking pan/dish from oven; add rice, chicken stock and 1 1/4 c. water; cover with aluminum foil; place in oven for 25 minutes.
Marinade:
In a food processor, process peanuts, Hoisin sauce, rice wine vinegar and a pinch of salt.
Place chicken in a bowl; rub marinade all over chicken.
Remove rice from oven; top with chicken thighs; pour on any extra marinade; cover with aluminum foil. Bake 10 minutes.
Remove dish from oven; remove foil; place back in oven and bake 15 minutes uncovered.
Fluff rice with a fork. Serve garnished with parsley.
8 servings.
*If chicken thighs are quite large, you may need to put back in the oven for another 10-15 minutes. Turn oven up to 390-400 degrees for this last cook to get the tops nicely browned.
