Make a healthy, easy and quick chicken dish on your indoor or outdoor grill. It's seasoned with garlic powder, Italian seasoning, salt and pepper and olive oil, then grilled to perfection. At the end, it's topped with melted cheese, pesto, lemon juice, to
4 boneless skinless chicken breasts, pounded to less than 1 inch thickness
salt and pepper, to taste
2 T. olive oil
1 t. garlic powder
1 t. Italian seasoning (or combination of ½ t. dried oregano, ¼ t. dried basil, ¼ t. dried thyme)
4 slices mozzarella cheese
½ c. basil pesto
½ c. cherry or grape tomatoes, halved
1 T. freshly squeezed lemon juice
¼ c. packed basil leaves, very thinly sliced
freshly ground black pepper
Preheat a grill to medium-high heat.
In a large bowl, combine chicken, salt, pepper, olive oil, garlic power and Italian seasoning; toss to combine.
Grill breasts for about 6-8 minutes per side until cooked through. Top each breast with a slice of mozzarella cheese; cook a minute or so until melted. Transfer to a platter; keep warm.
Toss together tomatoes, lemon juice and basil; top each breast with about 3 T. pesto, a scoop of tomato mixture and some freshly ground black pepper.
Serve immediately.
