The marinade will definitely give you the best lamb chops that you will ever make. The lamb will be tender, juicy and full of flavor.
1 t. fine lemon zest
1 t. freshly squeezed lemon juice
1 garlic clove, minced and mashed to a paste with 1/2 t. salt
1/2 t. salt
1 1/2 t. chopped fresh rosemary or 1/2 teaspoon crumbled dried
1 T. olive oil
four 1 1/4-inch-thick loin lamb chops (about 1 lb. total)
Preheat the broiler. (or grill)
In a small bowl, stir together lemon zest, lemon juice, garlic paste, rosemary, olive oil and pepper, to taste.
Rub lamb chops with marinade; let marinate on a plate/platter for 20 minutes.
Broil lamb chops on the rack of a broiler pan about 4 inches from the heat for 4 - 5 minutes per side for medium-rare meat. Allow to sit for 5 minutes before serving.
