One pot meals are always a hit for the cook because there is minimal clean up. It's a bonus when it cooks fast and even better when its delicious. This dish does it all!
9 oz. pkg. refrigerated fettuccine, uncooked
1 T. olive oil
1 T. Cajun seasoning, divided
1 lb. boneless, skinless chicken breasts, cut into thin strips
1 c. each red and yellow bell pepper strips
5 oz. pkg. baby spinach leaves
8 oz. tub cream cheese spread
3/4 c. milk
2 green onions, sliced
1/2 c. freshly shredded Parmesan cheese
Cook pasta in well salted boiling water in a large skillet for 2 minutes; remove from skillet; drain; set aside.
Heat oil in same skillet on medium heat; add chicken; sprinkle with 1 t. Cajun seasoning; cook 5 minutes or until chicken is done, stirring frequently. Spoon into bowl; cover.
Add peppers to the skillet; sprinkle with 1 t. remaining Cajun seasoning; cook and stir 5 minutes or until peppers are crisp-tender. Return chicken to skillet; add spinach; cook and stir 2 - 3 minutes or just until spinach is wilted. Add cream cheese spread, milk and remaining Cajun seasoning; cook and stir 2 - 3 minutes or until cream cheese is completely melted and sauce is well blended. Add pasta; cook 3 - 5 minutes or until heated through, stirring frequently. Remove from heat.
Serve, topped with onions and Parmesan cheese.

*If desiring a touch of heat, prepare using 7.5 oz. tub Jalapeño Cream Cheese Spread.
