You don't need to spend hours in the kitchen preparing the meat main dish. This spectacular pork tenderloin cooks in about 30 minutes, so with preparation time it can be on your table ready to serve with your favorite sides in about 45 minutes.
1 ½ lb. pork tenderloin
1 T. olive oil
2 T. Dijon Mustard
¼ c. brown sugar
salt and pepper, to taste
Brown Sugar Dijon Dipping Sauce:
2 T. Dijon Mustard
1 - 2 t. brown sugar
Preheat oven to 400 degrees.
Season tenderloin with salt and pepper on both sides, to taste.
Heat olive oil in a skillet over medium heat; add pork tenderloin; brown, about 4 minutes per side; remove from heat.
Place pork tenderloin in an ovenproof pan; brush tenderloin with 2 T. Dijon mustard; sprinkle pork with brown sugar; press gently with fingers.
Bake, uncovered 30 - 40 minutes, or until pork tenderloin is cooked through.* Remove from oven; allow to sit for 10 minutes before slicing.
Slice; serve with Brown Sugar Dijon dipping sauce. To prepare dipping sauce, stir together Dijon mustard and brown sugar. Taste test for desired sweetness.

*Use a meat thermometer to check that the pork is properly cooked. The inside meat temperature should reach 145 degrees.
