Beef Marsala and Scalloped Potato Casserole

Description

Feel your family a comfort food that they will actually like. It's an economical, quick meal to make with ground beef, a little wine and a box of scalloped, cheesy potatoes. Serve it with a salad and your favorite vegetable.

Ingredients

1 lb. lean ground beef
1 medium brown onion, chopped
1 T. olive oil
pinch of kosher salt
pinch of freshly ground black pepper
1 t. garlic powder
2 T. flour
1/2 c. sweet marsala wine
1/2 c. beef stock/broth
1/2 c. cheddar cheese, shredded
4.7 oz. box scalloped potatoes
1/3 c. milk
2 c. boiling water
1 T. butter
chopped parsley, for garnish

Preheat oven to 450 degrees.

In a large skillet over medium high heat, add oil; sauté onion for 3 minutes; add ground beef, salt, pepper and garlic powder. Break up ground beef; brown for several minutes. Discard any excess grease. Deglaze skillet with marsala wine; reduce by half. Sprinkle flour on top of meat; stir; cook 2 minutes; add beef stock/broth; stir; cook for 2 minutes.

Pour meat mixture into a 9 x 9 inch casserole dish or 2 smaller dishes that have been coated with cooking spray; sprinkle cheddar cheese on top.

In a small bowl, whisk together milk, water, butter and sauce mix from scalloped potato box.

Sprinkle the scalloped potatoes on top of cheddar cheese and meat; evenly pour milk mixture over everything.

Bake 20 minutes uncovered or until top is golden brown and edges are crispy. Let rest 10 minutes to let sauce thicken. Garnish with parsley, if desired.

Serve.
