This salmon dish can be on your table in just 20 minutes, so you won't have to wait long to serve it to your family. The salmon is cooked in a creamy, garlic butter sauce and turns out flaky and juicy. Serve it with your favorite rice and veggie.
4 salmon fillets, skin removed
2 T. butter
1 red onion, finely chopped
3 garlic cloves, crushed
1 c. white wine or preferred stock
1 c. cream
1/2 c. milk mixed with 1 T. cornstarch
2 T. lemon juice
zest of 1/2 lemon
salt, to taste
black pepper, to taste
freshly chopped parsley, for garnish
Heat a large non-stick skillet; brown salmon on both sides in oil until golden brown; remove from skillet; set aside; add butter and red onion; saute until soft and fragrant; add garlic; saute 30 seconds.
Pour in the wine/stock; allow to reduce; pour in cream and milk mixture; bring to a simmer; cook for 5 minutes before adding lemon juice and zest. Season to taste; add salmon back to skillet. Cook salmon in the sauce for 3-5 minutes.
Serve garnished with the parsley.
