Mojo Marinated Salmon

Description

The marinade used in this fish will becomes one of your favorites to use whether it is with fish, beef or chicken. The salmon turns out very flavorful and light. Choose your cooking preference: oven broiler, BBQ grill, or small countertop grill.

Ingredients

1 1/2 lb. salmon, cut into fillets
5 garlic cloves, minced
1 jalapeno pepper, very finely minced
1 handful fresh cilantro leaves, about 3 T. finely chopped
1/2 t. kosher salt
1/4 t. freshly ground black pepper
freshly squeezed juice from 2 limes, about 1/4 c.
freshly squeezed juice from 1 orange, about 1/2 c.
2 T. white wine or plain white vinegar
1/2 c. olive oil

Combine all ingredients, except for salmon; stir to combine.; pour over salmon in a large ziplock bag or an airtight container. Marinate salmon for about 2 hours in the refrigerator.

When ready to cook, place the salmon on the countertop about 1/2 an hour before cooking.

Preheat oven to broil. Line a large rimmed baking sheet with foil.

Place the salmon fillets on the baking sheet. Broil for 8 minutes.

A general rule for cooking salmon is approximately 8 minutes total cooking time per 1 inch of thickness. Cook 2 minutes less than the estimated time, then check for doneness. It can always be popped back into the oven, but overcooked fish cannot be fixed. The most important thing to remember is that the fish will continue to cook for a few minutes after taken off of the heat, so remove it just before it is done to your liking. Salmon is at its best warm and flaking while it still is a bit translucent even after resting.
