Even the kids will want seconds of this delicious meal. It's an easy weeknight dinner that's incredibly simple to make. Everyone can choose their own toppings.
Ingredients
- 1 lb. lean ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 t. dried oregano
- 1/2 t. ground cumin
- 14 oz. can chili beans, drained
- 1 c. chunky salsa
- 1/3 c. grated Parmesan cheese
- Eight 8-inch flour tortillas
- 2 c. shredded cheddar or jack cheese or mixture
- 3 green onions, chopped
- sour cream, salsa, sliced avocado, or chopped tomatoes, for serving
Steps
- In a large non-stick skillet, cook beef and onion over medium heat until meat is no longer pink; discard any fat. Add garlic, oregano, cumin and beans. Cook for about 5 minutes; stir in salsa and Parmesan cheese.
- Preheat oven to 350 degrees. Spray a 13 x 9 inch glass baking dish with non-stick cooking spray.
- Spoon 1/2 c. beef/bean mixture onto the center of a tortilla; roll up tightly; place seam-side-down in the prepared pan. Continue with remaining tortillas and filling, snuggling them alongside one another.
