Ingredients

butter, for greasing the baking dish
6 large croissants, split in half
4-5 t. whole grain mustard
12 small slices ham, or 6 large slices folded over
6 slices Brie cheese
12 eggs
3 cups milk
1 ½ plus ½ cups shredded Swiss cheese, divided
1 T. freshly minced tarragon
4 splashes hot sauce
1 ½ t. salt
black pepper, to taste

Butter a 9 x 13 inch glass baking dish.

Spread both halves of each croissant with mustard. Place the bottom halves of each croissant in the prepared baking dish. Add a ham slice to each croissant bottom; place brie on top; place another ham slice on top or fold larger slices of ham over the brie to make an envelope. Place croissant tops on top of the ham slices.

In a large bowl, whisk together eggs and milk; season with salt, pepper, hot sauce and tarragon; whisk until incorporated; stir 1 ½ c. shredded Swiss.

Pour egg mixture over croissants; press down on croissants so that they absorb more egg mixture.

Allow strata to rest for at least 30 minutes or place it in the refrigerator covered, for up to 12 hours before baking.

When ready to bake, preheat oven to 350 degrees. Right before baking, sprinkle remaining ½ c. Swiss over strata.

Bake for 35-50 minutes, or until the egg is puffed, set, and cheese is melted.

Serve hot.
