Ingredients
- butter, for greasing the baking dish
- 6 large croissants, split in half
- 4-5 t. whole grain mustard
- 12 small slices ham, or 6 large slices folded over
- 6 slices Brie cheese
- 12 eggs
- 3 cups milk
- 1 ½ plus ½ cups shredded Swiss cheese, divided
- 1 T. freshly minced tarragon
- 4 splashes hot sauce
- 1 ½ t. salt
- black pepper, to taste
Steps
- Butter a 9 x 13 inch glass baking dish.
- Spread both halves of each croissant with mustard. Place the bottom halves of each croissant in the prepared baking dish. Add a ham slice to each croissant bottom; place brie on top; place another ham slice on top or fold larger slices of ham over the brie to make an envelope. Place croissant tops on top of the ham slices.
- In a large bowl, whisk together eggs and milk; season with salt, pepper, hot sauce and tarragon; whisk until incorporated; stir 1 ½ c. shredded Swiss.
