Instead of going for take out chicken nuggets, try these wonderfully delicious homemade nuggets. They are so good because they have a little heat to them.
2 - 3 boneless, skinless chicken breasts
1 c. plain breadcrumbs
½ c. freshly grated Parmesan cheese
½ t. salt
3 T. Italian seasoning
½ c. Frank's Buffalo Hot Sauce or favorite hot sauce
½ c. butter, melted
Preheat oven to 400 degrees. Lightly spray a baking sheet with non-stick cooking spray.
Trim off fat from chicken breasts; cut into 1 inch, nugget sized pieces.
In a small bowl, mix together breadcrumbs, Parmesan cheese, salt and Italian seasonings.
In another small bowl, pour in hot sauce and butter; whisk to combine.
Dip chicken pieces into the hot sauce/butter mixture; roll around in the breadcrumb mixture, making sure they are well coated. Place the nuggets onto the prepared baking sheet.
Bake for about 25-30 minutes until the nuggets are browned and cooked through.
Serve hot with Blue Cheese or Ranch Dressing, if desired.
