If you need a delicious dinner but don't have a lot of time to prepare it, try this vegetarian meal. Dinner will be ready in under 30 minutes, clean up easy because you just used one pot but best of all it is yummy.
2 T. olive oil
1 yellow onion, diced
pinch of salt
2 garlic cloves, minced
2 fresh tomatoes, diced
8 - 10 oz. bag fresh baby spinach
1/2 c. crumbled feta cheese
1/2 c. cubed white cheddar cheese
1/4 c. part-skim shredded mozzarella cheese
2 c. elbow macaroni, whole grain/multigrain, if possible
1 c. low-sodium vegetable broth/stock
1 c. unsweetened almond milk
1/2 t. Italian seasoning
salt and freshly ground pepper, to taste
fresh parsley, for garnish
Heat olive oil in a large pan with a lid over medium-high heat. Add onions and a pinch of salt; cook 2 - 3 minutes, or until softened; stir in garlic; cook for 30 seconds or until fragrant. Add tomatoes, spinach, cheeses, macaroni, vegetable broth/stock, milk and seasonings. Stir to combine; bring to a boil, stirring frequently. Lower heat to a medium-low; cover; cook for 12 - 15 minutes, or until pasta is fully cooked. Stir frequently, about every 3 minutes, to prevent sticking.
Remove from heat; stir.
Garnish with parsley. Serve immediately.
