Try this fun, quick and easy tater tot casserole on your no meat Monday. Everyone will love it, including the kids.
1 lb. frozen tater tots
1/4 c. half-and-half
1 1/4 c. shredded Mexican cheese blend, divided
1 1/2 t. cornstarch
3 T. pico de gallo or chopped tomato
2 T. fresh cilantro leaves
sour cream, for topping
Preheat oven to 425 degrees.
Bake tots until very crispy, following the package directions, about 21-25 minutes.
Meanwhile, in a small saucepan, combine the half-and-half, 1 c. cheese and cornstarch. Whisking constantly, cook over medium heat until melted and smooth, 3 - 4 minutes; stir in the pico de gallo.
When the tater tots are done, transfer them an 8 inch cast-iron skillet.
Preheat broiler to High.
Spoon cheese sauce over tots; sprinkle with remaining cheese.
Broil until cheese is bubbling and melted, about 1 minute.
Serve, topped with cilantro and a dollop of sour cream.
