Try this fun, quick and easy tater tot casserole on your no meat Monday. Everyone will love it, including the kids.
Ingredients
- 1 lb. frozen tater tots
- 1/4 c. half-and-half
- 1 1/4 c. shredded Mexican cheese blend, divided
- 1 1/2 t. cornstarch
- 3 T. pico de gallo or chopped tomato
- 2 T. fresh cilantro leaves
- sour cream, for topping
Steps
- Preheat oven to 425 degrees.
- Bake tots until very crispy, following the package directions, about 21-25 minutes.
- Meanwhile, in a small saucepan, combine the half-and-half, 1 c. cheese and cornstarch. Whisking constantly, cook over medium heat until melted and smooth, 3 - 4 minutes; stir in the pico de gallo.
