Enjoy the flavors of Hawaii with this easy and quick to make grilled chicken. The chicken is marinated in a flavorful sauce that will make you and your family crave this dish. Serve it with rice or your favorite sides.
4 lb. boneless, skinless chicken thighs (chicken breasts will work)
1 c. unsweetened pineapple juice
½ c. soy sauce
½ c. brown sugar
⅓ c. ketchup
¼ c. chicken broth/stock
2 t. freshly grated ginger root
1½ t. minced garlic
sliced green onions, for garnish
In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth/stock, ginger and garlic. Reserve 1 c. sauce for basting. Place chicken thighs and sauce to a ziplock bag; marinate in refrigerator for at least 3 hours or overnight. Place reserved sauce in the refrigerator.
Preheat BBQ grill.
Grill chicken, covered, over medium heat for 6-8 minutes per side or until chicken is no longer pink. Baste occasionally with reserved marinade during the last 5 minutes of grilling.
Serve, garnished with green onions.
