Description
Whether these are served as an appetizer or as the main dish, you will love these lettuce wraps. They are made with Caribbean flavors and chicken served in large lettuce leaves and topped with a lovely mango salsa.
Ingredients
- Caribbean Pulled Chicken:
- 1 1/2 lb. boneless, skinless chicken
- 1/2 c. diced canned tomatoes
- 1 c. chicken broth/stock
- 1 bell pepper, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 1 jalapeno, minced
- freshly squeezed juice from 1 lime
- 1/2 c. fresh cilantro, chopped
- 1/2 t. ground ginger
- 1 T. cumin
- 1 t. fine sea salt
- 1/2 t. black pepper
- 1/4 t. allspice
- 1 T. paprika
- 1/2 t. coconut sugar
- Mango Salsa:
- 3 mangos, diced
- 1/3 c. diced red onion
- 1/3 c. chopped fresh cilantro
- freshly squeezed juice from 1/2 lime
- 1 head of butter lettuce or lettuce of choice, torn into very large pieces
- 1 avocado, sliced
- tomato, sliced or diced
- other desired toppings, as desired
Steps
- Put a slow cooker liner in the base of the slow cooker for easy clean up.
- Place all pulled chicken ingredients into the crock of a slow cooker. Stir; cook on High for 3 hours.
