Description

Whether these are served as an appetizer or as the main dish, you will love these lettuce wraps. They are made with Caribbean flavors and chicken served in large lettuce leaves and topped with a lovely mango salsa.

Ingredients

Caribbean Pulled Chicken:
1 1/2 lb. boneless, skinless chicken
1/2 c. diced canned tomatoes
1 c. chicken broth/stock
1 bell pepper, diced
1 onion, diced
2 garlic cloves, minced
1 jalapeno, minced
freshly squeezed juice from 1 lime
1/2 c. fresh cilantro, chopped
1/2 t. ground ginger
1 T. cumin
1 t. fine sea salt
1/2 t. black pepper
1/4 t. allspice
1 T. paprika
1/2 t. coconut sugar

Mango Salsa:
3 mangos, diced
1/3 c. diced red onion
1/3 c. chopped fresh cilantro
freshly squeezed juice from 1/2 lime

1 head of butter lettuce or lettuce of choice, torn into very large pieces
1 avocado, sliced
tomato, sliced or diced
other desired toppings, as desired

Put a slow cooker liner in the base of the slow cooker for easy clean up.

Place all pulled chicken ingredients into the crock of a slow cooker. Stir; cook on High for 3 hours.

While chicken is cooking, prepare the mango salsa:
In a bowl, toss together all salsa ingredients; place in the refrigerator until ready to use.

When the chicken is done, shred with 2 forks; stir chicken into the sauce; cover; let sit for 10 minutes.

Assemble lettuce wraps, top with mango salsa and other desired toppings, like avocado and tomato.

Serve.

4 servings.

*The juice from the chicken is delicious, but makes the lettuce wraps a bit messy. You might want to strain a little when assembling.
