If it is good enough for The Donald, it must be really good! Serve it like The Donald likes it with mashed potatoes and mushroom gravy, if desired.
2 lb. fresh ground beef
1 Spanish onion, finely diced
1 red bell pepper, finely diced
1 green bell pepper, finely diced
2 cloves garlic, minced
1 large beefsteak tomato, finely diced, seeds removed
2 extra large eggs
2/3 c. seasoned breadcrumbs
¼ c. chopped parsley
2/3 c. tomato puree
1/2 T. salt and black pepper
Preheat oven to 350 degrees.
In a large saucepan, slowly cook peppers, onion, garlic and tomato until onions turn translucent; let cool.
In a large mixing bowl, add ground beef, cooked cooled vegetables, eggs, breadcrumbs, parsley, salt and pepper; mix well.
Place mixture in a 14 x 9 x 2 inch ceramic baking dish; form into a loaf. Top loaf with tomato puree.
Bake for 45-55 minutes or until brown and firm.
Let rest for 10 minutes before slicing.
Serve with mushroom gravy and mashed potatoes, if desired.
