Take your pick of what you like best, the juicy, crisp salmon or the flavorful sauce of honey, soy sauce, garlic and orange juice. Serve it with your favorite pasta, rice or vegetables.
2 T. butter (or olive oil)
4 - 6 oz. salmon fillets, with or without skin
freshly squeezed juice from 1/2 an orange (1/4 c. fresh squeezed orange juice)
3 T. honey
2 T. soy sauce
4 cloves garlic, crushed
kosher salt, to taste
freshly ground pepper, to taste
1/2 an orange, sliced to serve
Heat butter/oil in a skillet over medium-high heat. Add salmon, skin-side down; sear on one side for 3-4 minutes. Flip salmon over; sear for 2 minutes.
Pour in orange juice; allow to reduce to one half of the quantity, about 1 minute to reduce down if skillet is hot enough. Add garlic; cook until fragrant, about 30 seconds. Move salmon to the sides of the pan; add in honey, soy sauce and garlic, stirring well to combine. Simmer until reduced to a syrup, about 30 seconds - 1 minute. Move salmon around in the sauce to evenly coat. Remove from heat when salmon is cooked to your preference. Season with salt and pepper to taste. Drizzle salmon with the sauce.
Serve salmon over rice, noodles, steamed vegetables or with a salad.
