Make a healthy snack or a light lunch easily with just a few ingredients. You can also rub a bit or garlic on the toast and add tomato slices, if desired.
2 slices whole-grain bread, toasted
1 avocado, sliced
1 T. olive oil
1 t. freshly squeezed lemon juice
1/2 t. kosher salt
1/8 t. red pepper flakes
Toast bread; top toast with avocado slices, mashing the avocado lightly with a fork. Drizzle with the oil and lemon juice.
Sprinkle with salt and red pepper flakes.
Makes 2 slices of toast.
