Although the traditional toad in a whole is great, adding avocado and Cheddar cheese makes it even better. It makes the perfect breakfast because it's simple and quick to make but also really delicious.
1 avocado
4 bread slices
4 T. butter, divided
4 eggs
kosher salt
freshly ground black pepper
1/2 c. shredded sharp Cheddar cheese
1 T. chopped chives, for garnish
Cut avocado in half; carefully scoop out flesh into 1 large piece. Lay the avocado half on its side, with the hole on its side; cut into 3-4 large pieces, keeping the shape of the hole in each slice.
Cut a hole in the center of each bread slice, big enough to fit an avocado slice.
Melt 2 T. butter in a large non-stick skillet over medium heat; place 2 bread slices in the skillet; toast on each side, about 2 minutes per side. Place avocado slices inside each slice of bread. Crack an egg into the center of each circle; season with salt and pepper, to taste. Cover; cook until eggs are cooked to the desired doneness, about 3-5 minutes. Sprinkle cheese on top of each slice; cover; cook until cheese is melted. Repeat with remaining ingredients.
Serve, garnished with chives.
