Although this oatmeal is called Holiday Oatmeal, it's actually perfect year round. It's a wonderfully delicious, hearty and healthy breakfast dish with fresh apples and bananas, dried fruits, and pecans. Add a little cinnamon and maple syrup, if desired.
3 c. rolled oats
5 1/2 c. milk or water
2 apples, diced small (about 2 c.)
1/2 c. dried cranberries or raisins
1/2 c. pecans chopped
1/2 t. kosher salt
2 medium bananas, sliced
1/3 c. brown sugar, for serving
In a medium size saucepan over medium heat, combine oats, milk, apples, cranberries, pecans and salt. Cook, stirring frequently, until oatmeal has thickened, about 10-12 minutes. Remove from the heat; stir in bananas.
Serve, topped with brown sugar.
