On a diet and don't know what to eat and feel satisfied? Try this delicious meal for 7 WW Smart Points with protein and veggies in a light Alfredo sauce. It can be on your table in about 30 minutes.
Chicken and Broccoli:
1 T. olive oil
4 skinless, boneless chicken breasts
salt and freshly ground pepper, to taste
8 oz. sliced mushrooms
3 c. fresh broccoli florets
1 T. freshly squeezed lemon juice
4 thinly sliced lemon slices
Alfredo Sauce:
1/2 T. unsalted butter
2 cloves garlic, minced
1/2 c. low-sodium chicken broth/stock
4 T. one third less fat cream cheese or neufchatel cheese
1/4 c. grated Parmesan cheese
Season chicken with salt and pepper, to taste.
Heat olive oil in a large non-stick skillet; add chicken to skillet. Add mushrooms; cook over medium-high heat for 4 minutes, turning chicken halfway through. Add broccoli, lemon juice and lemon slices; cover; cook 8 - 10 minutes, or until chicken is done.
In the meantime, make the sauce:
Melt butter in a large skillet over medium heat; add garlic; cook, stirring often, just until fragrant. DO NOT burn the garlic. Turn heat down to medium-low; add broth/stock, cream cheese and Parmesan cheese; cook and stir for about 3 minutes, or until cheeses have melted and sauce is thickened.
Remove from heat.
Serve chicken and vegetables with Alfredo sauce drizzled on top.
4 servings.
*If wanting more sauce, add a little bit more broth and cheese.
